[Editor's Note: As soon as I saw this post, I put this recipe on my must-try list. It sounds so comforting and delicious! It's a really interesting twist on traditional tomato soup, and is a great place to experiment with local blue cheeses from dairies or creameries near you. This recipe for blue cheese and tomato soup calls for Cashel Blue, an Irish farmhouse cheese, and while I probably could have tracked it down by driving all over the state of Rhode Island, I opted for our own wonderful Great Hill Blue, made in Massachusetts. The soup glides down your throat, soft and creamy and satisfying.
