[Editor's Note: Gazpacho is one of my favorite ways to use summer's best tomatoes, but this particular recipe is a tomato-free zone. Instead, it uses summery fruit to create beautiful layers that are healthy and delicious to eat. It's a stunning recipe sure to please at this season's backyard gatherings. --Genie]

Layered Fruit Gazpacho

I whipped up this cold fruit soup this past weekend to eat as a light dessert, but you could easily serve it as a big part of breakfast or as a mid-summer afternoon snack. If you want to add a touch more decadence, try dolloping with a small amount of whipped coconut milk.
