[Editor's Note: In the wake of this busy season, I'm looking for quick dinners that have slow-cooked flavor. This lentil minestrone is perfect for thatadd bread and a salad, and dinner's done! Plus, most of the (speedy) work is done in the morning when you throw all the ingredients in the slow cooker to simmer all day. --Genie]
Lentil Minestrone Soup Recipe
It's easy to throw together, uses household staples, and freezes and reheats VERY well. I kept it vegetarian, but Adam suggests I throw in a hambone next time. Sliced smoked sausage would be awesome, too.
