[Editor's Note: Holiday food is notoriously high in calories, so it's great to have a recipe in the bank that offers seasonal flavor with a little better bang for your caloric buck. These muffins fit the billthey'd be great for a Thanksgiving morning breakfast, or for another time in the holiday season when you're looking for something deliciously pumpkin-flavored but easier on the waistline. --Genie]
Low Calorie Pumpkin Muffins with Streusel Topping
The taste of pumpkin is present, but doesn’t take over, and it captures the taste of the season. They are slightly sweet and the streusel topping pumps up the flavor and the nuts add the needed crunch. I double the amount of streusel, because I believe one can never have too much streusel.
