Vegan Baked Beans
Editor’s note: Fourth of July barbecues are usually synonymous with hot dogs and hamburgers, but it’s the side dishes that I always look forward to, like freshly shucked corn on the cob and a vinegary coleslaw. Caroline from The Broccoli Hut shares her mom’s recipe for maple baked beans, which just happen to be vegan--and delicious. --Jane
My mom makes her signature baked beans every year for our Fourth of July celebration (accompanied by the usual hamburgers and watermelon, of course). Their maple-brown sugar flavor always brings me back for seconds. And sometimes thirds. Now that summer is in full swing, I’ve been craving those baked beans, so I made a lower-sugar version.
