The Best Chicken Ever: Peruvian-Style Roast Chicken with Green Sauce

Featured BlogHer Network Post

Editor’s note: Peruvian-style roast chicken is to die for. If you don’t have a Peruvian rotisserie in your town--and even if you do--you owe it to yourself to make this dish at home. Jennifer from Once Upon a Chef has perfected the recipe for the amazingly succulent whole chicken, which is marinated and then oven-roasted until perfectly crisp. --Jane

This is my take on Pollo a la Brasa, that delicious spit-roasted chicken made popular by so many Peruvian restaurants. The chicken is first marinated in olive oil, lime juice, garlic and spices, and then oven-roasted until tender, juicy and crisp-skinned. The accompanying green sauce, which gets its color from cilantro and jalapeño peppers, is spicy, creamy and downright addictive.
