Sunday, May 11 (22 weeks, 6 days) Breakfast – 2 eggs scrambled with mushrooms, 2 tortillas, cup of coffee, and creamer Snack – Peach and strawberry smoothie from South Block Cafe and beef jerky Dinner – Roasted potatoes, mixed greens, honey mustard dressing, and 1 poached chicken breast Dessert – 1 piece of cherry pie and 1 scoop of vanilla ice cream Monday, May 12 (23 weeks) Breakfast – Overnight oats: 1/2 cup of museli, 1/2 cup vanilla yogurt, 1/2 cup almond milk, 1/4 cup dried cherries, 1 cup of coffee, and 2 tbsp creamer Snack – 1 fiji apple and 1 laughing cow cheese wheel Lunch – mixed greens with raspberry walnut dressing, 1/4 cup of quinoa, scallions, and 1 no bull burger Snack – Strawberries with whipped cottage cheese, a banana with 2 tbsp peanut butter, and 2 eggs scrambled with mushrooms (3 separate snacks) Dinner – 1/2 cup of brown rice and 1 slice of turkey and spinach meatloaf Tuesday, May 13 (23 weeks, 1 day) Breakfast – Overnight oats: 1/2 cup of museli, 1/2 cup vanilla yogurt, 1/2 cup milk, 1/4 cup dried cherries, 1 cup of coffee, and 2 tbsp creamer Snack – 1 fiji apple and 1 laughing cow cheese wheel Lunch – Romaine lettuce, raspberry walnut dressing, and 1.5 slices of leftover meatloaf Dinner – 1/2 cup brown rice, 1/8 cup of cheese, 3/4 cup ground turkey mixture (ground turkey, refried beans, taco seasoning, and diced tomatoes), homemade guacamole, and taco sauce Wednesday, May 14 (23 weeks, 2 days) Breakfast – scrambled eggs, 2 slices of bacon, vegan potatoes and spinach, and diced fruit (work event) Lunch – 1/2 cup of leftover brown rice and 1 cup of ground turkey taco mix Snack- Romaine lettuce, honey mustard, and croutons Dinner- 2 tortillas, leftover ground turkey taco mix, lettuce, cheese, and salsa Thursday, May 15 (23 weeks, 3 days) Breakfast – Overnight oats: 1/2 cup of museli, 1/2 cup vanilla yogurt, 1/2 cup milk, 1/4 cup dried cherries, 1 cup of coffee, and 2 tbsp creamer Lunch – 1 cup of brown rice, 4 turkey meatballs, and scallions Snack – 1/2 cup of cottage cheese with 1/2 cup of strawberries and 2 hard boiled eggs Dinner – large salad with honey mustard dressing and two piece of homemade thin crust pizza Friday, May 16 (23 weeks, 4 days) Breakfast – Overnight oats: 1/2 cup of museli, 1/2 cup banilla yogurt, 1/2 cup milk, and leftover peanut butter in the jar Lunch – 1 cup of brown rice, 4 turkey meatballs, and scallions Dinner – Vegetable sandwich at Potbelly’s Saturday, May 17 (23 weeks, 5 days) Breakfast- Jalapeno cheese bagel with egg, bacon, and gouda (at Brooklyn Bagel in Arlington) Lunch- Roasted chicken on a potato roll with a side salad Dinner- A gazillion orange slices at the DC Divas game and 1/2 a quesadilla when I got home . . .
