[Editor's Note: A pressure cooker remains on my wish list of kitchen tools with which I have not yet played. Everything I've read about them makes them sound like a miraculous applianceable to make risotto quickly, or cook amazing beans, or, now, even make gumbo like you'd find it in New Orleans. Better yet, it makes that gumbo in just 45 minutes! No pressure cooker? Well, don't write off this recipeit includes back-up instructions for people like me who haven't yet taken the plunge and bought one. --Genie]
