[Editor's Note: I really like a good Alfredo sauce, but I rarely make it at home. This recipe might change my tuneit has all the richness of Alfredo but a depth of flavor and a bit more of a nutritional punch thanks to the pumpkin stirred in at the end. It's wonderfully seasonal dish that is a perfect way to celebrate Vegetarian Month. --Genie]
Savory Sundays: Pumpkin Alfredo
Lately, my stomach has been craving the comforting flavors of fall. I have already churned out a few squash desserts (like this pumpkin bread pudding and butternut squash custard), but my squash cravings have yet to be sated. And so I decided it was time to bring those squash flavors to the dinner table.
