[Editor's Note: Salmon cakes were in our family's regular dinner rotation when I was growing up, so I'm surprised I've never made them as an adult. I'm definitely going to roll out this recipe on an upcoming weeknight, since it looks like it hits a bunch of really great marks: it's quick, it's healthy, and it sounds delicious! --Genie]
Salmon Cakes With Lemon Basil Aioli
The salmon cakes are crispy on the outside, moist and flavorful on the inside and most of the process can be done ahead of time, making dinner come together in minutes. Thanks to my friend Mercedes‘ Mom for the recipeshe made it for us when we were in college and I’ve been hooked ever since! I lost the worn recipe card a few years ago, but I think this comes very close.
