No-Cook Vegan Dinner: Raw Pad Thai

Editor’s note: Summer produce is practically bursting from the bins at the farmers’ market these days. So much so that I ended up buying a ton of zucchini with no plan of what to make. Then I saw this vegan Raw Pad Thai recipe from Sarah at The Sweet Life, in which she swaps zucchini for rice noodles, by cutting it into noodle-size strips. A tangle of zucchini, shredded carrots, and bean sprouts are topped with a citrusy almond butter-coconut oil dressing to make a no-cook summer meal seem special. --Jane

It has been hot!... Eden is sitting on my lap wearing only a diaper, Swede (the dog) is passed out next to us, tongue hanging the side of her mouth, and I am downing ice water like it’s strawberry sorbet (because that’s what I wish it was). I really do hope the rain comes to nourishes the earth and helps grow the food. Until then I will enjoy the unseasonal heat with refreshing dinner like this Pad Thai.
