Non-GMO Corn, and Other Food Fantasies

Editor's Note: In the ongoing effort toward conscious eating, sometimes we get hung up on labels, categories, phrases and semantics, which naturally (organically?) leads to misperceptions. This thoughtful post offers one perspective on the fallacy of non-GMO corn, the "myth" of organic food and our love/hate relationship with mold. --Heather

Maize and corn are artificial inventions, created by human selection and breeding of the teosinte plant, genetically modifying the plant for plumper, sweeter seeds.  Wheat is modified.  Soy beans are modified.  Anything we selectively breed, from our lettuce to our fruit to our chickens and pigs, cows and yes, anything we've planted in our own "organic" gardens is genetically modified.
