Back in 2008, not quite a year into my launching San Diego Foodstuff, I wrote about Will Gustwiller and his relatively new business, Eclipse Chocolate. When I visited him at his three-month-old storefront on El Cajon Blvd., he was feverishly working in his tiny kitchen outfitted with a single induction burner, trying to get a new truffle flavor, a white chocolate jasmine tea and Cointreau ganache, to come together.
