Editor’s note: These Mini Lasagna Stacks from Elaine from The Italian Dish are fabulously easy to put together. She uses wonton wrappers instead of pasta, and layers them with marinara sauce, spinach pesto, and, of course, mozzarella cheese. You can even make individual lasagnas by putting each stack in its own small baking dish. Your kids will love it. --Jane

You can make these mini lasagna stacks in separate au gratin dishes, which are nice to serve to guests. You can also just make up a batch in a regular baking dish. They are easy to scoop out and serve--no slicing lasagna here! This makes a great vegetarian main dish or a side dish.
