Spinach and Artichoke-Stuffed Potato Skins
[Editor's Note: This dish takes the traditional spinach-artichoke dip, which is already one of my favorite party dishes, and combines them with potato skins for a hearty vegetarian appetizer or, even, main course. It's surprisingly easy and, as long as you factor in enough time to bake the potatoes, quick to pull together. --Genie]
Spinach Artichoke Potato Skins
While we were there I had spinach artichoke potato skins. I love potato skins but I have not had a potato skin in about 20 years! I didn’t even realize it was something you could make at home. I’m not really sure what I thought restaurants did to potatoes to make potato skins but I definitely thought it would be difficult!
