Editor’s note: Tacos have long been a staple at my California table, but I always fill them with meat or seafood. I never thought of making a vegetarian version. Lauren from Climbing Grier Mountain stuffs corn tortillas with sweet potatoes and roasted bell peppers, and tops it all off with avocado and a dollop of chipotle cream. -- Jane
I had been brainstorming ideas on ways to keep weeknight dinners light, but still tasty. So I took a chance and made tacos sans meat. I know, crazy town, right? Who knew a Kansas girl could go without red meat?
