Turn Leftover Turkey Into Turkey Croquettes

I used my deep fryer (I am an Okie after all) to fry these in some vegetable oil, but you can fry them in a skillet with some oil on the stove. Just cook one side (for a minute) then turn to the other and continue to all sides are a crispy brown. Cool on a paper towel to soak up the oil and then garnish with some parmesan cheese or a sauce with a touch of spice (for a little kick).
