[Editor's Note: If you've got leftover turkey from Thanksgiving, these croquettes from My Chic Life might be just the thing to make. They're a tasty appetizer for a casual evening with houseguests who haven't left yet, or, paired with a salad, a lovely lunch. No turkey leftovers? Well, just sub in cooked chicken, beef or pork instead. --Genie]
I used my deep fryer (I am an Okie after all) to fry these in some vegetable oil, but you can fry them in a skillet with some oil on the stove. Just cook one side (for a minute) then turn to the other and continue to all sides are a crispy brown. Cool on a paper towel to soak up the oil and then garnish with some parmesan cheese or a sauce with a touch of spice (for a little kick).
