[Editor's Note: Though at first glance, I thought the photo with this recipe included feta cheese, a beet pairing I'm quite accustomed to using often. But it's actually a tofu topping, one that adds protein to this graceful vegan entree. With beets in season right now, this is a great dish to add to the repertoire. Vegan Beetroot Tarte Tatin
The most popular way of making the beetroot tarte, I found, was the Tatin style. Tarte Tatin is a French style tarte where the pastry is place on top of the ingredients then baked. Once done, it is flipped upside down to serve.
