Editor’s note: Even though he’s just a toddler, my son can’t get enough of mushrooms, and, like most of us, he’s partial to a buttery piecrust too. Annalise from Completely Delicious created a Wild Mushroom Pie with Parmesan Crust that we’re sure to gobble up. Annalise also includes a handy chart for the many different types of egg wash. -- Jane
I confess that I dreamed about this pie for months before I finally got a chance to make it a reality. It started back at Thanksgiving when I went a little pie crazy. Two months later, I rolled up my sleeves, rolled out a variation on my favorite piecrust, and filled my kitchen with the smell of mushrooms cooking with garlic and fresh herbs. Even my sweet tooth approved.
