[Editor's Note: Grain salads are terrific, healthy options to take for lunch on a workday or to serve as a quick weeknight dinner. They can be made up in big batches, then eaten as leftovers for a few days in a row, saving time while still providing excellent taste and nutrition. Wild Rice Shiitaki Salad with Miso Dressing

Mushrooms and wild rice are a happy duo. Bringing in an array of Asian flavors saves this salad from veering too far into the stuffing category. Chopped green onions add a fresh crunch to the finished dish while the meaty shiitake mushrooms give it a hearty umami that is hard to resist.
