I was thinking about soup this morning, and decided I am a soup snob.

Ah, soup. Surely it was one of the first foods cooked by early man, after the bloody haunch of giant elk began to get monotonous. Some soups can qualify as super-foods, with all the vitamins, minerals, and anti-oxidants any nutritionist could ask for.

Soups can be humble, yet unmatched in deliciousness. It doesn’t have to take a lot of expensive ingredients to make soup, so they can be extremely economical while feeding a crowd. Of course I’m not opposed to elegant ingredients such as nice herbs, crab or wine. I grow a few of my own herbs, and I am lucky to live near the coast where I can catch my own crab—or get it fairly cheaply at the fish market. The wine used in a soup doesn’t have to cost more than a few dollars a bottle.

Soup

I was a sous chef in a restaurant many years ago, and I learned to make truly great soups. Not just blowing my own horn—I have a gift when it comes to making good soup. My soups get raves from friends and family. They beg me to make soup. I even dream about leaving teaching for a career operating a soup truck.

Have to say, with the general warmth of menopause, I haven’t made a whole lot of soup lately, but when the weather cools a bit, I’ll get back into soup mode. I don’t have much choice.

The problem is, because I have an intimate knowledge and understanding of good soup, I can’t order soup in a restaurant. Most restaurants, I am sad to say, turn out salty, glumpy, inedible, sorry excuses for soup.

I’ve found I should not even try to eat restaurant soup. It only hurts my feelings when I dip my spoon in hopefully, only to taste salt, maybe some flour, and little else. Many restaurants are serving soup literally dumped straight from a can into the soup warmer. Can the downfall of civilization be far behind?

This makes me morose, because if I want soup, now I have to make it myself. I’d like to be treated to a bowl of soup that I didn’t have to make with my own large and capable hands. But I can’t lower my soup standards! I’d rather do without.

How about you? Are you a snob about any foods, refusing to accept anything less than your standard of deliciousness or the brand you insist is the best?

I LOVE soup!!!! Soup and sandwiches. I could eat it every night but my family would object. A soup truck sounds amazing!

Made chicken and corn chowder today. The house smells great-- yet another soup benefit! This soup is loaded with protein, just what my 86 year-old dad needs. Hurray-- he ate a bowl and loved it!

HomeRearedChef Come on over! I never met a mushroom I didn't like. If I didn't think I'd poison myself, I'd gather them in the woods. One of these days I'll take a class to learn which ones are edible.

A superb broth and a variety of colors, textures and tastes, all united in one bowl, voila! Good nutrition! Add a fresh baked whole grain artistic bread with some fresh grated cheese and a good wine...HEAVEN!

Can you please come to my house and make me some soup???? I LOVE SOUP but only of the homemade variety. The salty crap that comes from cans just doesn't do it for me. Sadly, k-ster hates, hates, hates soup because he doesn't want to "drink meals" so I only make it for me. I love it, but it's a sadness that he won't eat it. I've started making it in the crockpot and freezing many bowls for my to take for school lunch. Mmmmmm. So good.

Funny story- one time I made a broccoli soup that was a puree. I thought I could use this as the vegetable with a pork chop and some rice. Maybe he wouldn't complain if the whole meal wasn't soup. The next thing I know, he's cut up his meat and tossed it with the rice into the soup! I could have killed him for complaining about having to eat SOUP for supper!

Isn't it funny that some perfectly wonderful people hate soup? And then toss their meal into it?

That's a good idea about freezing the bowls for lunch-- so easy to grab and go.

I am undeniably a food ... well, not snob, but picky eater doesn't quite begin to cover it either. Let's just say if there is ricotta, mushrooms, unfried potatoes, or tomatoes in their natural form in what ever you are trying to get me to eat, DON'T TELL ME. That's just the short list.

I am definitely a 'soup snob' and hold that title proudly!! I agree soups in restaurants have become poor excuses for soup (with the exception of the French onion soup I had in Paris last time I was there!).

I try to have homemade soup ready for my family every day in the fall and winter, and love making it. Today we are having curried lentil with root vegetables.

I must say that I have also become a bit of a stock snob... with my husband being celiac, I have started making my own stocks, or only buying really nice (but pricey) gluten free stocks.

I have never been to a soup truck, but would love to try it!

Lorioz-- the French onion soup in Paris is on my bucket list. Your family is lucky to have all that soup. Homemade stock is the best, but there are good stocks on the store shelves, too. I've made stock from roasting veal bones in the oven, but rarely have the time for that, sadly. Homemade chicken stock is easier and gets made more often in my house than other stocks. So maybe I'm not as snobby as I claim!

I love soup! There is nothing better than home-made soup and especially if it's made by someone who loves you! Restaurants - poefffff.... can't compare. I am very .. fussy when it comes to soup!

Melanie, I, too, once played sous chef for a while, at a retirement home. And I was so disappointed to see what some of the ingredients were used as substitution. Yuk! I understand they have to cut corners to stretch the budget, but it felt so horribly wrong to feed those poor people food like that. Garbage!

I LOVE soup, and I can't wait for winter. I see soup as romantic, with freshly made/baked bread. So after reading your blog here today, now I am in a real mood for soup. I think I'll make my "Rich Peasant's Soup" this weekend for my family, with all fresh ingredients. But you and I would have it no other way but fresh. (Smile!)

Yum. I know it isn't exactly soup, but I did make a pot of chili yesterday. I never make it the same way twice. This pot is really good and I'm mad because I can't figure out what made it taste "just right." Maybe it was the green peppers that my mom grew in her organic garden?!

isthisthemiddle I'd love for us to get together one day for a really good meal (down-home comfort food). And yes, you can bring the bread. LOL!

About your chili, you need to start keeping note. My kids have nagged me so often about not knowing what I did exactly to a recipe to make it taste so good, that now I keep a notebook handy and write down absolutely everything I add. (Smile!)

Great suggestion! You are a great mom. The only thing is, I can't resist the urge to start throwing in ingredients that I have on hand at the moment... so maybe at the bottom of the recipe I'd need to say "add anything else in the fridge, to your taste." :-)

I love soup but I'm not a soup snob (at least not yet...). I can be a bit of a restaurant food snob... or at least that's what people like to (jokingly) tell us. I don't mind going out to a restaurant. I enjoy it. But I get annoyed when I get served either a. bad food or b. food that isn't bad but is decidedly mediocre and I could make way better at home for a fraction of the cost.

So true. When you've tasted a really good (fill in the blank), it's frustrating to be served something that's just okay . Other than soup, I find that I'm hard to please in any restaurant seafood dish, since I have caught my own fish and cooked it the same day! It's a curse, really. I'm glad I'm not so snobbish in other areas of my life or I'd be a bitter girl! sassymonkey _

sassymonkey I hate going to a restaurant for a meal just because I didn't feel like cooking, and then I come home and tell my hubby "I can do way, way better." It really takes the fun out of being fed by someone else. LOL! I guess that makes me a "snob!"

HomeRearedChef And it really has nothing to do with the cost. One of our favorite places to go is a little place near my in-laws for pho. Definitely among the cheaper meals we eat out (not much more than fast food) but it's a good solid meal.

Honestly. Not to oversimplify, but I think it comes down to the chef or cook's attitude toward the food and toward the customer. Most often a cook who understands/ loves good fresh food and cares about the customer will turn out a meal worth eating. And that applies to restaurants at all cost levels. Just look at all the good food coming out of food trucks!
