Spinach Feta Breakfast Wrap

I love finding easy, yummy, healthy things to eat. I have been kicking myself daily for unhealthy eating habits and lack of exercise. It's time for a change so I will share new goodies as I find them. I made a big batch so I could easily reheat in the morning; there is no time to cook in the morning and I often end up eating a late breakfast at the office. This batch fit into 3 lunch meat containers - it yields 2-3 wraps from each container, depending on the size of your tortilla or wrap.
Splash of milk - don't drown your eggs, a little will do
1/2 bag frozen chopped spinach - thawed & drained
1 c crumbled feta cheese (use more or less based on your love of feta)
Salt & pepper to taste
Wrap or tortilla - I don't like the low carb ones, they always stick together and tear apart after they're filled
Start out scrambling the eggs like you typically would. When they are half cooked add in the spinach. Just before the eggs are done, add in the feta, salt and pepper. Do not overcook the eggs because they will cook more when you reheat them and you don't want them to be dry.
Let it cool and then divide into the containers. When ready to use divide onto a tortilla or wrap and microwave on 70% power for about 2 minutes. Check it half way through since microwaves vary on cook time and adjust as needed. Enjoy!
