Spinach Quinoa Cakes
I have to admit, I was slightly skeptical about making this recipe because I had never tried Quinoa before and didn't like the taste of it when I boiled some up. That being said...these cakes are delicious and packed in protein at 11 grams! The calorie count is a little high because Quinoa is high in calories, but they are so filling that one cake is enough!
I found the recipe on Pinterest (le duh) when I was looking for ways to use Quinoa. The recipe calls for scallions, garlic and salt- all of which I didn't have/use and just put some Garlic Salt in the mix instead. I also didn't have any breadcrumbs so used crushed saltine crackers to help hold it all together. They still taste great- fresh or reheated!
According to the recipe I should've ended up with 14 cakes but I only got 11 out of the deal...not sure why? I also only used 3 eggs instead of 4 since it just seemed way too liquid-y to me.
I boiled up my Quinoa a few days previously, using vegetable broth since it was all I had. Apparently you should use chicken broth or even just water. Maybe I'd like the taste of the plain Quinoa if it was made with chicken broth?
Either way, this recipe was a huge success and I will definitely be making them again! They're so tasty, great for anyone who doesn't eat meat but still needs the protein and are so filling that even it keeps me full for a pretty long time (which says something).
