Start the Tradition: Recipes for Pancake Night

Plenty of pancake palaver, today. IHOP is serving pancakes - free -- all day. Tonight, in homes all across the world, families will sit down to pancake suppers. And food bloggers -- whew, food bloggers -- we're all about pancakes today. Why do we eat pancakes on the day before Lent begins, Shrove Tuesday, or, if you prefer, in Mardi Gras terms, Fat Tuesday?

WHY DO WE EAT PANCAKES ON 'FAT' TUESDAY?
" ...there is a historical ... reason why pancakes are consumed on this day. Many centuries ago, fatty foods including dairy were forbidden during the 40 days of Lent. So in order to use up their supply of these ingredients, the Anglicans added flour and voila — a feast of pancakes on the day before Ash Wednesday. ... growing up in an Episcopalian family, and watching all my Catholic friends head with their families to Galveston or New Orleans to revel in those last few days before Lent, I always felt a little sheepish walking into my church’s annual Shrove Tuesday Pancake Supper. There's nothing tame about all the pancake recipes from my favorite food bloggers. So make tonight a pancake night. Just pick one recipe -- any recipe -- to start the Pancake Night tradition in your own home.

But for anyone who's 'not inclined to the kitchen' I have it upon very good authority -- my mother! -- that Hungry Jack makes the best pancakes. After all, it's the tradition that counts, NOT the recipe.

I always loved when my mom would whip up a stack of huge, plate-sized pancakes with eggs over-easy, and bacon for dinner.  I'm thinking pumpkin pancakes are in order for me.  It will go nice with the cold, rainy weather I'm suffering through!

I'm sorry we missed your request for pancake recipes. Here is ours for German Apple Pancakes. I make it on our Maine Windjammer, the Schooner J&E Riggin, for our passengers often. Of course we always have Maine Blueberry pancakes too, but this one is always a hit, especially in the fall when we get to the orchard and pick them fresh.

But figure it out -- maybe you both go to IHOP and call each other. Or -- a stretch I know but there's always the Hungry Jack option unless TW's in the mood for pancakes too? -- make pancakes and then EAT at the same time.

My aunt and I do this, we have "coffee" quite regularly, even though we live 900 miles apart. One of us will call with a coffee on hand, the other will grab a cup of coffee too.

Hmm. Off to call my aunt ...

So much homier than 'allow the flavors to meld'. Letting the batter rest for awhile is actually a great trick for pancakes, though I go back and forth on its necessity. But at my house last night, the 'later' Swedish pancakes were better than the 'first' ones.
