Strawberry Cheesecake Ice Cream

Here is another quick and easy recipe for ice cream, it takes less than 10 minutes to throw together and it is delicious! 


  • 2 c. heavy cream
  • 2 c. half and half
  • 8 oz. block of cream cheese, softened
  • 3/4 c. pure cane sugar
  • 3 graham crackers
  • 1 c. strawberries, hulled and sliced (you can also puree the strawberry's for an infused strawberry flavor)
  1. Mix heavy cream and sugar in bowl *pure cane sugar does not dissolve like regular sugar, you may have some left over in the bottom of t he bowl, and that's fine*
  2. Mix half and half and cream cheese in a blender until blended (it should just look like milk when it's done)
  3. Break graham crackers into bite size pieces, or smash into crumbs
  4. Add cream cheese blend to cream mixture and whisk for 5 minutes
  5. Add to ice cream maker and follow manufacturers directions for churning
  6. In the last two minutes of churning, add graham cracker bites and strawberries
  7. Place in freezer container, then into freezer and freeze for at least 3 hours
These are "Lets do gluten free" ice cream cones and they taste exactly like a regular cone. Amelia loves them.
