The days are getting warmer, but evenings are still mostly cool, and I think this recipe for Stuffed Shells with Eggplant, Ricotta, and Greens from Mountain Mama Cooks looks like a perfect meatless main dish for this time of year. Kelley says she's becoming a "part-time vegetarian" and dishes like this one make her a happy camper at dinner time (although she's still working on convincing the family that a dish with kale, eggplant, and broccoli is better than pancakes!)
