When I saw the golden, fluffy picture of this pumpkin and cheese souffle on Tastespotting last week, I knew I had to have it. And I wasn’t going to let a little thing like the recipe being entirely in Italian stop me!

I don’t know if it’s because I speak Spanish and French, or if it’s because I am Italian and it’s in my blood, or some other, stranger reason, but I can read Italian just fine. Here, I googled italiano and I’ll test myself with the first thing I found, apparently some pharmaceutical website....
