I had a great day today!! Thanks to a wonderful friend (who found out several shows into a season subscription to the Broadway Lights series at Blumenthal Performing Arts Center that she really didn't actually like musical theater and gave me her remaining tickets that we had gotten together) I had an extra ticket to see Mary Poppins this afternoon. Sophie had gotten to go to see Wicked earlier in the summer so this time it was all abouadt Madison today. This was her first event all on her own and she loved it! She was dancing up a storm during the "Step In Time" number. I feel very blessed to have been able to share this first time event with her one on one.
So since today was Madison's day, I decided to make something that she would definitely like for dinner - and when you ask her what she wants, more often that not, her answer will be chicken. I adapted this recipe from one I saw Rachael Ray do on 30-Minute Meals. Tonight I used a combination of chicken breasts and thighs but I normally do this recipe with all thighs. I also cubed the chicken tonight rather than cooking it in whole pieces since I was doing the combo but normally I use the thighs whole. Don't forget to send the oranges down the disposal (if you have one) to give your drain a bit of a spa treatment.
Along with some rice and some simple glazed carrots and we had a very enjoyable dinner to cap off a really awesome day!
