Sweet Potato Mac n Cheese

7 more weeks to go…7 more weeks to go…Eeeek!

I can’t help but freak out a little, okay, maybe a lot. There are only seven more weeks to raise funds for the MDA (Muscle Dystrophy Association) and I’m having quite a hard time finding generous people. I know they are out there, but where???? I never knew fundraising could be so challenging. It must be me.


Have you ever wanted to do a good deed? I usually get this way around Christmas time but decided to start earlier… :)

To be honest, I’m not sure why I signed up to do this. I was at a race and wanted to commit my yearly good deed and so I did. I will admit, fundraising is not my forte.

Then I was matched with buddies to run for and coincidentally (which I don’t believe in) they have muscle dystrophy! Uhm, it just got real. 

You may wonder what this has to do with a scrumptious bowl of mac n cheese, and I will tell you…a lot.

Cooking is more my style – not fundraising – so I had to really think about this…


Of course over a big bowl of mouth-watering, delicious, mac n cheese.

You may know that I am in love with cheese, specifically, Cabot cheese. Their cheese is so darn good, I could eat a whole package. (And I will never admit if this has ever happened in one sitting or not.)


When I found out that Cabot is hosting a Farmers’ Legacy Recipe Contest and the winner receives $5000 towards a charity of their choice, the bells and whistles went off in my head.

I may be saved.

Mac n cheese may just save the day!

Their new line of legacy cheese is the best. I mean the best I have ever tasted in my life. Period.

I went with their Farmhouse Reserve which is creamy and bold – perfect for sweet potato mac n cheese. To add a twist, sweet potato was added for a unique balance of flavor and of course, added veggies never hurt.

The kids and even my box-loving husband, ate every single bite… It’s that darn delicious.


I mean seriously, whose the mac?!

To make it even more awesomeER (is that even possible?) the farmers of Cabot will help match me up to $300 in donations.

I am $90 away from reaching that $300 goal – do you possibly know anyone who is able to donate to the MDA?
