Sweet Potato Souffle Pancakes

Pain sure is a GREAT teacher! My lesson for the day is that doing knee ups, side abs, and the other core moves on this workout, with a medicine ball (I don’t have a “ugi”) causes all sorts of pain!

Pain that sticks around … through laughing, bending, reaching, scratching!!!

These pancakes were my Advil for this pain!

Ingredients: 2 Eggs 1 baked or boiled sweet potato – roughly mashed 1 cup milk (I used almond) 1 tablespoon vanilla 1 teaspoon canola oil 1 cup self raising flour 1/4 cup oat bran 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon cloves 1/4 teaspoon dry ginger 1/2 teaspoon nutmeg 1 and a 1/2 teaspoons cinnamon (or add according to your cinnamon addiction) 3 tablespoons brown sugar

Directions: Beat the eggs really, really well. Then add the mashed up sweet potato, the milk and vanilla and mix till they are all well blended. Then stir in the flour, oat bran, baking soda, baking powder, salt, cloves, ginger, nutmeg, cinnamon and brown sugar. I mixed all the ingredients with a wooden spoon – no rhyme or reason – other than the fact that I wanted to try and keep tiny chunks of sweet potato intact in the pancakes. Heat up some oil (I used olive) in a pan set on a medium-low flame, and cook the pancakes. It took me a couple of minutes on each side for the pancakes to cook through.

I whipped up some cinnamon cream – just whipping cream and a couple of shakes of cinnamon – to go with the pancakes and of course honey had to bathe the whole concoction :)

I love ALL breakfast foods so try to sneak in some fiber, vegs and/or fruits into them to keep them somewhat healthy. Do you find yourself sneaking in something healthy to make something that would not be considered normally healthy-healthier?
