Sweet Saturday: Orange Cookies

Orange CookiesMy husband and I love cookies. They are a regular purchase for us at the grocery store. Recently, it occurred to me that we would probably save money if we made our own cookies. Now, we are making a concerted effort to bake cookies, each taking turns. Last week, DH baked chocolate chip cookies for him and Ginny. (I don't eat chocolate chip cookies because I don't really like chocolate.)

This week was my turn. I decided to try a new recipe that I had long ago pinned on my Sweet Tastes board on Pinterest. The cookies were called Outrageously Moist Orange Cookies. Naturally they appealed to me because they were (a) NOT chocolate and (b) fruit flavored. My only issue with the recipe is that it was set to make 5 dozen cookies; way more cookies than I wanted to make. Luckily, it was easy to halve the recipe. Phew!

To get prepped, I preheat my oven to 350 and then zested and juiced one orange into a bowl. I poured half of the zest and juice in a small bowl, putting it to the side for the frosting. I kept the original bowl available for the cookies.

Then, I creamed 1 stick of butter(at room temperature) and 1 cup of sugar in my mixer. Once that was done, I beat into the butter mixture the original bowl of zest and juice, one egg, and 1/2 tsp of orange extract. 

Next, I sifted together 2 cups flour, 1/2 tsp baking powder, 1/2 tsp baking soda, and 1/2 tsp salt. Slowly, I added the sifted flour mixture to the wet ingredients, alternating with 1/2 cup of milk.

The cookies were ready to bake. I scooped the cookie batter on my cookie sheets and baked for 10-12 minutes. 

As the cookies baked, I got to work on the frosting. I whisked together 1 Tbsp butter (at room temp), the small bowl of juice and zest, and 1 cup of powdered sugar. I forgot to add a pinch of salt but I don't think it needed it. The flavor was great without it. 

When the cookies finished cooling, I spread the frosting on most of the cookies. My husband taste tested the cookies for me and thought they tasted too "orange-y". (I imagine this is close to me saying "too chocolate-y".) So, I left a few unfrosted just for him. Is that love or what?

The orange cookies taste great. They are very light and moist.
