Italian Biscotti…An Italian Cookie and Family Favorite!

Italian Biscotti is an Italian cookie and in our home, a family favorite!  I grew up watching my mother bake these delicious cookies every year during the holiday season, and my children watched me.  This is one family tradition I am certain will be around for a long time to come!...more

Gluten Free Cinnamon Swirl Banana Bread

To be honest, I was a little concerned that I was not going to be able to post this week since we spent all weekend moving into our new home! I am very excited about all the space I now have to spread out in, and that my kitchen is now double the size of my previous one. Let me tell you, having only nine sets of cupboards, two drawers, and no pantry was not a picnic. Now I have so much storage, it's almost overwhelming. But you won't hear me complaining. ...more

Mini Gluten-Free Cheesecakes

To begin, Happy New Year! I still haven't quite come to terms with it being 2013 yet, but I have high hopes that this year will be a great one. Easy Baked Meatball Subs

I have been extra busy at work lately, which is in addition to all the normal craziness I manage to pack in each week. Needless to say, I have not had much time or energy to cook lately, but I still try to have dinner on the table each night, even if it only takes me ten minutes to make. I had some Udi’s hotdog buns in my freezer and a bag of Meijer Homestyle pre-made frozen meatballs and figured I could make a quick meatball sub that still tasted amazing. These subs took very little time to prepare and even less effort, yet they were very delicious....more

Pepperoni Stromboli with Pillsbury Dough

When I found out that Pillsbury was going to be releasing a line of gluten-free ready made doughs, I was like a little kid at Christmas. So when I was at my local Meijer and saw that the new doughs were in stock, I couldn't resist buying two of each kind. I know, I get a little too excited about food. ...more

Gluten-Free 7-Up Biscuits

These little biscuits have been circulating Pinterest for quite some time now. After seeing a post about them for what seemed like the gazillionth time, I decided to give them a go, gluten-free style. Since the primary ingredient is Bisquick, it was really simple to substitute GF Bisquick instead. I was very impressed at how easy these little biscuits were and they disappeared quickly. With a light sweet flavor as a result of using the 7-up, the biscuits are slightly crumbly and on the doughy side. Which I won't complain about since that's the way I love my bread. I'll definitely be making them again....more
