It's corn season! And Jersey corn is hands down the best corn. I know that for a fact because I was in Idaho this summer where we also had fresh corn, and it was nowhere near as good as Jersey corn. So there are good things about New Jersey :)I have a lot of corn at home, so I wanted to make it the centerpiece of the meal. I have to thank my sister-in-law, Christine, for pushing me to make this recipe up. This is her first year gardening and canning and she is falling in love with the whole thing! She's calling asking about different methods and how to do things, which I always warn her that I am still learning a lot too but she has faith in me I guess. A month ago, she told me that she was going to need my salsa recipe. I actually laughed because not only did I not have one, but I never wanted one!
I love cooking with couscous and lentils. Just in general. They are both quick, easy, and can be seasoned numerous ways. I often have a pre-made container of each in my fridge either to eat as-is, or to add to a new dish.
This is a great dish for dinner in a hurry. And as usual for my dishes, is very kid friendly. Both kids loved it.
All that's needed for this recipe is two small pots and a strainer. I love meals that don't require a million pots and pans, and that take less than 30 minutes to make.

The last few years, I've been subscribing to different veggie boxes or complete weekly menu boxes, to see what works for me. When I lived in my student town, there were different possibilities to subscribe to organic veggie boxes. To me, the biggest disadvantage was that it was a monthly subscription. Where I live now, there's a very similar system, but you can decide each week if you sign in for next week's box. I like that system a lot—but when I got pregnant, I jumped off, too tired to work out weekly menus based on what was in the box.
Yes, I am aware that it is still only August, but like a lot of people, I LOVE fall and can't wait until it gets here. Snuggly clothes, pumpkin flavored everything, using the fireplace, lighting candles, drinking potfuls of tea apologetically... you get the drift.
Made with real mint leaves – sort of. At least I made the best use of whatever buds were growing from my mint pot. They are not growing very quickly though, so the next time I make this ice-cream, it would probably be after summer this year....more
