Monday's are my quinoa or pasta nights. I usually feel like the house is in complete disarray from the weekend and I spend more time on getting the house back to normalcy and less time in the kitchen.. After the weekend I also really want a home cooked meal and usually a hearty one. Quinoa and pasta are it! Easy to do, quick, filling and totally enjoyable. It's not about working smarter, not harder!

Normally I don't bake unless I have a reason to. Sounds odd, but whenever I have something sweet in the house I usually end up finishing it off way too fast. I am a coleslaw fanatic ... I love the perfect creaminess and dill of a good homemade slaw! But every now and again, I need to change it up and use my cabbage a little different. Thai Quinoa Salad is usually my go-to change up.
Vietnamese rice paper rolls are healthy and oh so delicious. They will forever remind me of visiting my sister when she worked in the seminary building at Multnomah University. I used to go visit her all the time and we would go get these rice paper wraps for lunch dates and we absolutely loved them. The great thing with Vietnamese food is it also fills you up. Long gone are the days of visiting my sister at work but new are the days for lunch dates with homemade chicken avocado spring rolls. :)
Have you ever heard of Wet Chocolate Cake? I didn’t think so. That is the weirdest name for any cake. “Wet” isn’t an appetizing word any way you slice it, especially when used in the same sentence as “cake”. It makes the cake sound soggy and mushy....more
