These cookies have to be the easiest cookies that I've ever made! As you all know, I'm somewhat of a lazy cook. I just don't want to spend a lot of time in the kitchen, especially when a snack craving hits. So when I can have a healthy dessert and it takes no effort, I'm completely on board. And when I say these take no effort, I completely mean it. There are only three ingredients and you don't even have to measure them if you don't want to. Throw those three things in your food processor and voila....dessert is done! The only thing you even have t
The Avocado Breakfast Tostada is a delicious Mexican-inspired dish that makes a perfect, warm, and hearty breakfast but it can really be enjoyed any time of the day. The base of the tostada is a tasty homemade masa cake that tastes like a warm and fluffy tortilla but is really easy to prepare. The masa cake is topped with a thick,= layer of creamy avocado mash, followed by roasted shiitake mushrooms. The final touch is an crisp around the edges oven fried egg ....more
I've been putting off doing some true, from-scratch, gluten free baking for a while now. The kale seems to come into my life in a constant flow whether its via my CSA or my good intentions at the store. More often than not it ends up wilting in my fridge but here’s a way to save it from that fate....more

Chocolate Peanut Butter Bundt Cake was inspired by Fudge Brownie Bundt Cake, one of my favorite cakes of all time and a recipe that I make constantly .This cake is just as amazing as the original but with a few slight changes, most notably a delightful peanut butter twist. Adding peanut butter powder with the dry ingredients gives the dessert a subtle peanut butter flavor that pairs perfectly with the rich, chocolat...more
As the name suggests, Carrot Cake Bread Pudding Muffins are the wonderful combination of carrot cake and bread pudding into adorable petite treats. To make the bread pudding, gluten-free bread cubes and grated carrots are first tossed with a spiced milk and egg mixture before being baked into golden, irresistible bread pudding muffins. Luckily, there’s no need to wait for the muffins to cool, just pop ’em out of the pan right away out and smother in the delectable lemon cream cheese glaze.
