Farro Risotto with Cannellini and Basil from FamilyStyle Food

One thing that's fun about eating less meat is the way it helps you discover delicious new foods that you might otherwise have missed. I remember how excited I was when I first tried farro, a type of whole grain wheat from Italy that's becoming more popular in the U.S.  Some types of farro need to be pre-soaked, but if you look in an Italian market you can find a type called "semi-perlato" that cooks quickly. When I saw this recipe for Farro Risotto with Cannellini and Basil on FamilyStyle Food, it sounded like a perfect Meatless Monday dish, and if you haven't had farro, I'm betting you'll like it. (Farro is not gluten-free but most recipes using it can be made with brown rice for a gluten-free version.) ...more

Portobello Margherita Pizzas

It's Meatless Monday again. Wonderful! This tasty dinner features big, "meaty" portobello mushrooms, so it's a good one for those who are hesitant to give up animal meat. My cousin sent me a picture of this dish, asking if I'd ever made these pretty little pizzas. I hadn't, but I made them for dinner that very night, and they were a huge hit. Pumpkin Alfredo Sauce

[Editor's Note: I really like a good Alfredo sauce, but I rarely make it at home. This recipe might change my tune—it has all the richness of Alfredo but a depth of flavor and a bit more of a nutritional punch thanks to the pumpkin stirred in at the end. It's wonderfully seasonal dish that is a perfect way to celebrate Vegetarian Month. --Genie] ...more

Thursday Tofu Tacos

That's right, I said it. Tofu tacos. That title turns off the boys in my family a bit, but since we're in a meal planning phase currently- it's hard to miss a Mexican themed food night, and still keep some nights vegan.  My husband Jay is Hispanic, therefore my kids are, too.  But he's not Mexican, and doesn't care for Tex-Mex food either.  So this was an experiment all around.  Also, I've never crumbled or cooked tofu like this before- it's always sliced or cubed in Korean food I make....more
