Slow Cooker Lentil Minestrone Soup

[Editor's Note: In the wake of this busy season, I'm looking for quick dinners that have slow-cooked flavor. This lentil minestrone is perfect for that—add bread and a salad, and dinner's done! Plus, most of the (speedy) work is done in the morning when you throw all the ingredients in the slow cooker to simmer all day. --Genie] Lentil Minestrone Soup Recipe ...more

Slow Cooker Potato Soup from Budget Bytes

When Meatless Monday also happens to be Christmas Eve, I'm guessing an easy slow cooker soup might be just the thing for busy cooks. The Vege-fare-yan!

Last Thanksgiving, my then 3 year old, told me about her last day of school before break. It started with Scooby Doo. No, I'm not talking about everyone's favorite four legged friend who loves to eat just about anything with his stoned out sidekick, this Scooby Doo just happened to be a turkey from a local farm. Our preschoolers got to learn all about farm life and got to hold and touch their guest visitor. I just smiled at the way my daughter was captivated by this creature. Not thinking anything of this conversation two days later, we cook our beautiful Thanksgiving feast....more
