Black Bean & Sweet Potato Stew

It’s May and I know I should have visions of asparagus and strawberries dancing through my head but yesterday it was so grey and cool out that I simply wanted a warm, comforting meal.I had a large sweet potato on the counter and then remembered that I picked up black beans in bulk at the store last week.  Black beans and sweet potatoes are a match made in heaven, don’t you think?  I pulled out a few other veggies and basic seasonings to get my creative juices flowing....more

Chickpea Cakes with Cucumber-Yogurt Sauce from A Veggie Venture

Admittedly I'm a well-documented chickpea fan, so when I saw these Chickpea Cakes with Cucumber-Yogurt Sauce from A Veggie Venture, I immediately bookmarked them as a fantastic Meatless Monday recipe idea. Mashed chickpeas are combined with flavors like garam masala, cayenne, green onion, and cilantro, and then fried until they're crisp and served with the flavorful yogurt sauce. This sounds delicious to me, and if you sub ranch dressing for the yogurt sauce you might even get the kids to try it!...more

At the End of a Vegan Road Trip

When we started our trip to Seattle a few weeks ago, I posted here about some of the preparations we made, in order to make vegan traveling easy. Such organization, such good intentions, such big plans. It all seemed good in theory... Here's the shot of the back of our neatly packed car, on our first day out, when we stopped in Durango to make up a nice salad for lunch. ...more

This week on I Eat Plants: An interview with a chef + Cinco de Mayo (vegan-style) and my Red Radio interview

I am loving the responses to the socca post yesterday! I was so happy to learn that there are many socca fans but also that I wasn’t the only one who delayed the skillet flat bread experience. If you missed the post, be sure to check out my Socca-Style Pizza “Bread” recipe!...more

Asparagus, Potato, and Goat Cheese Pizza

Oh.  Oh oh oh.  Yum.  Seriously yum.  So yum I'm having considerable trouble coming up with complete sentences.  This pizza is gooooooood.  It's flavorful, colorful, and not at all heavy.  This is the kind of pizza made for warm weather, friends, and crisp white wine.  You can have the pizza dough ready to go and the potatoes already boiled before your guests even arrive.  If you only try one new flavor combination on your pizza this season, make sure this is it.  Yo ...more

Vegan Antipasto Pizza

I had a wicked craving for pizza the other night.  The kind of craving that tempts you to drive to the local pizza shop in the rain and hope to heaven they can pull off a vegan pizza. Then I remembered…  I write a food blog!  I could make a pizza myself!  *light globe*I was in the mood for a special pizza, though.  A pizza so amazing, it would completely cure me of all junk food cravings for the week and possibly for life....more
