The old adage, "Music soothes the Savage Beast" may be true but today in Northeast US it should be stated that "My Oven soothes My Savage Beast." I was brave. I attempted. I conquered. For many, comfort food is an enormous tureen of soup, fragrant with spices and steaming. I can’t remember the first time I heard about kolaches, but I do remember first making them myself maybe 5 or 6 years ago off an archived newspaper recipe. A kolache is a beautiful little baked pastry with choose-your-own filling. They’re labor-intensive and taste best hot out of the oven, which puts them in the same category as donuts and cinnamon buns: learn to make them, appreciate them, and then pay a professional baker to make them for you.

When I made the conscious choice to become a part-time vegetarian I thought, "What am I going to eat?". My diet was meat heavy (about one serving of meat per meal) but I knew if I slowly weaned myself off it, it would encourage my family and I to eat more greens and more importantly, eat in a way to support a sustainable earth. As I started to research vegetarian recipes, I realized the idea is not so scary after all. After committing to this goal for more than a year, I haven't looked back, I feel healthier and cleaner.
The day after my 3 miles, 6 days a week jogging, vegetarian, dentist Dad died in 2008 from a rare form of cancer, my life long hog farming Great-Great Uncle died, then the next day my full of life cousin died too.
