Hi, my name is Elaine and I am a nut addict.  Almonds, cashews, walnuts... it doesn't matter what kind, put them in front of me and I will devour them all!  Will someone please intervene to stop the madness?!  Okay, I may be a bit over-reacting, however when I eat a handful of these tiny nutrient-packed  gems, I can't help but reach for another handful and maybe one more.  Before I discuss the bad nature of eating too much nuts, allow me to share the many reasons why nuts as part of your daily diet are good for you:

It's Friday and I hope that everyone had a very productive week! If not, don't worry, we will start nice and fresh on Monday!! The family and I will be attending our local Strawberry Festival this weekend and I cannot wait to see our children enjoy the festival's activities and pick some nice and sweet strawberries straight from the field.  It will be a perfect family outing.  I anticipate last of strawberries and fresh spring vegetables, like asparagus, peas, beets, cabbage, radishes and turnips that I can try new recipes or cook one of our family recipes.

Betcha you're wondering what the hell matcha is. That's okay. I did too. But two of my dear friends had a birthday party and when I asked one what flavor I should go with for their delightful little bites of petite cake, she said matcha. And I said matchawha? I went stumbling around to various stores, scratching my head and wondering if I really had to go to an Asian market to get this shit. And then it dawned on me. Matcha is a kind of green tea powder. And you know who loves exotic tea anything? Those hipsters that flood the Whole Paycheck every night after work.

Actually, the inability to ingest as many calories as I desire, bites. I've recently, in the past 2 weeks, endeavored to return to my premarital weight. Seventy pounds ago I looked a heck of a lot better than I do now, I can assure you. While there's a plethora of weight loss gimmicks around, I think my friend, Tammy, gave me the truest wisdom: "Weight loss is 10% exercise and 90% what you put in your mouth."

It's amazing how much has been revealed to me in terms of using food to stamp out emotions and cope. I just figured I stuffed my face because I liked the food. Last night while Stef and I were at the drive-thru, I was looking at the cartoony, Photoshopped images of the offerings, and I just thought, 'None of this is even real food!' Hardly an epiphany, but so true.I weighed 211 lbs at the doctor this morning. 209 was my highest before that. I want so badly to be a healthy weight because I will feel exponentially better in all aspects.

I’ve been attempting to do every Monday as a meatless Monday but sometimes forget and find myself devouring some animal protein or other. But, I am doing more and more often with surprising results. Today, breakfast was a home made bircher muesli with Agave syrup and yoghurt (homemade from Hansell’s yoghurt mix) and cacao chips. And a black coffee with coconut sugar. Great way to start the day.

We’re back! Sorry we’ve taken a little time off since our last post. We’ve been busy traveling and playing in hockey tournaments back in Minnesota and we got a little pre-occupied with all of that plus our normal school work. For dinner tonight, I made this delicious Chicken and Rice Casserole, which I was excited to try because I love the Campbell's Chicken and Rice bakes but I never have the Cream of Anything soups because I find them visually gross and off putting.So this was perfect!Only, of course, what I ended up making was in no way a Chicken and Rice Casserole.
