Grilled Vegetable Focaccia

What I'm about to tell you will revolutionize your backyard barbecues this summer: pizza on the grill. Color Me Healthy: Fill Your Plate With a Rainbow of Phytonutrients

I remember years ago when I was invited to dinner at someone else’s house, I might or might not be able to eat much of anything. After years of being a vegetarian, then macrobiotic, there was even more I wouldn’t eat; I was becoming more discerning. Something I remember about being a guest was how often I’d see no color on the plate. One particular homemade dinner was chicken breast, cauliflower, mashed potatoes, and iceberg lettuce with roquefort dressing. A whiter shade of pale! Which brings me to some suggestions about coloring outside the lines when it comes to purchasing foods, preparing them and then making your plate glow, all the time, with a rainbow of phytonutrients. ...more

Raw Kale Salad with Apples from Kalyn's Kitchen

It's Memorial Day, which marks the unofficial arrival of summer in the United States. Summer means picnics and barbecues, and if you're looking for an unusual meatless salad option to take to a summer gathering I highly recommend this Raw Baby Kale Salad with Apples, Sunflower Seeds, and Lemon Dijon Vinaigrette that I posted recently on Kalyn's Kitchen. The recipe is not only incredibly tasty, but it's vegan, gluten-free, loaded with nutrients, and unusual enough that it will probably intrigue your friends. And I think a salad with fruit is perfect for the first Meatless Monday of summer, when everyone starts to think about eating lighter meals....more

How to Make Roasted Vegetable Egg-less Rolls

[Editor's Note: I love it when I stumble across a recipe that takes a quite-unhealthy-but-quite-delicious food item and lightens it up. Phyllo and plenty of vegetables are what make these eggless egg rolls a much healthier option than the kind from your local take-out Chinese joint. --Genie] ...more
