Our First Vegan Potluck

We had our first Positively Vegan Potluck here on Saturday night. For a first time thing, I think it went pretty well, but there are a few things I'll change if I do it again. All things considered, it was a good learning experience, and fun too. And the food everyone brought was beautiful and delicious.   Read more >

Diabetic Choclae marble cheesecake

I am always on the search for yummy desserts that are lower in fat, sugar and calories.  I have tried many, but have not posted them because I have thrown them away.  There is no sense in wasting my time posting something I think is not good.  However, I just happened to find this yummy Diabetic chocolate swirl cheesecake recipe as I was googling stuff, and it looked pretty good, so I gave it a whirl! I found this recipe at The Diabetic Gourment Magazine website.   Read more >

Raw Kale Salad with Apples from Kalyn's Kitchen

Kale Apple Salad

It's Memorial Day, which marks the unofficial arrival of summer in the United States. Summer means picnics and barbecues, and if you're looking for an unusual meatless salad option to take to a summer gathering I highly recommend this Raw Baby Kale Salad with Apples, Sunflower Seeds, and Lemon Dijon Vinaigrette that I posted recently on Kalyn's Kitchen. The recipe is not only incredibly tasty, but it's vegan, gluten-free, loaded with nutrients, and unusual enough that it will probably intrigue your friends. And I think a salad with fruit is perfect for the first Meatless Monday of summer, when everyone starts to think about eating lighter meals.  Read more >

Eating Vegan With Non-Vegan Friends

Vegan Loaf

I've been thinking about putting together a class called something like, "A Vegan is Coming to Dinner. Help! What Do I Feed It?" I think there are lots of people out there who have new vegans in their lives, whether it's friends, or co-workers, or kids coming home from college. It can be confusing, I know. And I think a simple one or two day class could do a lot to fill in some of the blanks for people who are used to centering a meal around a piece of meat.  Read more >

Healthy Alternative To Soda: How To Make Water Kefir

Water Kefir Soda

We all know soda isn't healthy, but giving it up is not always easy. Are there any healthy alternatives to soda? You betcha! Water kefir, my favorite beverage, reminds me of cream soda with a slight tang. Personally, I prefer water kefir over kombucha. Both of these beverages are so enjoyable I have continued to brew them while living in our RV, where space is tight and everything we brought had to be "worth it." Water kefir and kombucha made the cut.  Read more >

Vegan Buddha Bowl

Up until recently, stir-fries were one of our easy go-to dinners. It's good to have a few of those, for nights you don't want to read recipes or figure out something new. But now I'm not using much oil in my cooking (like none at all in the last week), and I'm not sure how to manage a dry stir-fry in a cast iron pan. The solution is actually pretty simple. Steam some vegetables instead of stirring them, put them over rice or quinoa, and add a killer sauce. The result is a favorite I've had in restaurants lots of times - a Buddha Bowl.  Read more >
