Recipe: Amazingly Cheesy Asparagus Melts

Let's be honest: asparagus is pretty amazing.First of all, because it grows so quickly and doesn't require pesticides, it is a naturally organic food. It's also high in fiber and packs in only 27 calories per cup. But the real clincher? Asparagus is high in glutathione, an important anti-carcinogen and the most potent anti-cancer antioxidant available. And did we mention that it's simply delicious? Because, you know, it is. Steam it and then toss it in fresh lemon juice for a delicate, invigorating side....more

Perfect Mushroom Stroganoff

I grew up eating, and loving, Hamburger Helper Stroganoff.  Both my desire for nutritious food and for ethically produced food have long since separated me from this childhood favorite.  Last week, I finally created a vegan mushroom stroganoff that completely fills that comfort food sized hole Hamburger Helper had left behind.  Bonus: it is totally good for you....more

One Minute Kitchen Hack: Soup Trifecta

I love soup!  Most soups are fast, easy and can be loaded with lots of healthy foods.  I love to double my soup recipes and freeze half.  Spending time cooking recipes in Julia Child’s Mastering the Art of French Cooking taught me that good food is about layering flavors.  Each ingredient plays a role in the final flavor of a dish and should be treated appropriately.  Soup is not about boiling a bunch of veggies and meats.  I spent a lot of time treating my soups as a pot of boiled ingredients....more

The Cost of Whole Foods…It’s Not What You Think

A while back I promised to write about the myth that eating a whole food diet is more expensive than buying packaged, pre-processed foods. Today is that day.I went to the farmers' market on Saturday and the grocery store today. My total grocery bill, including breakfast and lunch for my daughter and myself, and dinners for the whole family for seven days was $87. I know people who spend 50% more than that, or even twice as much, in a week. How did I do it?...more

Almond Milk & Strawberry Smoothie

This year I am consciously trying to make better eating choices and being more active. We've all heard the phrase "abs are made in the kitchen", well so is pizza and cake. For me, my taste buds and frankly, laziness overpowers me in the kitchen. One of my new years resolutions is to master 3 signature meals and getting creative in the kitchen. Last night I was craving something sweet, I scoured my apartment for some sort of chocolate or candy only to come up short. I decided to make a smoothie but tried something different. I blended frozen strawberries and almond milk to create this glorious slushy. With a splash of vanilla extract, it became the healthiest alternative milkshake I have ever eaten.  To make this delightful dessert, use 1 cup of almond milk, throw in 4 frozen strawberries, and a splash of vanilla extract. Voila! You have a perfect dessert under 100 calories! Make more and save it for tomorrows treat or even freeze it for a popsicle....more

"I Want To Eat Healthier" - Making Changes in the Kitchen Towards a Healthier You!

I am probably the last person on earth who would ever have given healthy eating advice. Several years ago, before I remarried I was a self-confessed fast food addict. There were days when I ate fast food meals three times a day. Needless to say I gained quite a bit of weight and felt sluggish. Getting off the fast food drive-thru track wasn't easy. It was a die-hard habit and I absolutely went through withdrawals. ...more

Sweet Potato Salmon Cakes

This sweet potato and salmon cakes recipe is less than 10 ingredients (woo-hoo) and super quick to prepare (oh yeah)! So I had some sweet potatoes sitting on my counter for about a week. They were taunting me. I was in the mood to make something new but had no real motivation to find a new recipe....more

Baked Crispy Cajun Spiced Chicken Thighs

It was both a grievous and wonderful moment when I first made baked chicken thighs a couple of years ago. Up to that point I had squandered many years avoiding any meat from a chicken other than the white meat. There were several reasons for that....more
