PIE POPS!! Oh What a Cliff Hanger!!! (Work in progress)

I know I know I’m sorry I started talking about the wonderfulness called Pie pops and then just left you hanging…. Opps. To my defense it was close to mid-night and I was exhausted.
So where was I? Oh yea… mmmmm Pie pops…. *Drool*
But what are Pie pops you ask, well my dear reader I will tell you!!! No better yet I will show you!!!!
They talk to you, they say Eat meeee.( I imagine a sweet little voice not that of a child cause that would be too creepy since your about to chomp into one. More like Yeardley Smith, adult voice but so adorable you just wanna bite her.)
But how does one little Pie pop light this beautiful fuel that now burns inside me to spread the love to others, and how do you get some of this hot-ness?
Was it the joy of actually doing something for myself that didn't include being wrapped around a toilet, or the fact that my loving boyfriend once he saw them preceded to tell me how awesome they look... probably both.
So let’s all commemorate this milestone that I am about to embark on… my first blog recipe! *Happy Dance*
I wanted to start out with something simple. Something everyone could do, well honestly…. If I can master it, anyone can…. I am not Betty Crocker in the least.
So let’s get down to business shall we?
--Oh yea I forgot to add that I will be adding pictures later, I ran out of Pie crust and I really don't feel like running to the store just so I can take pictures of what I'm typing right now. So be patient my friendly reader and I will come through. Just to tease you a little more I will have where my pictures will be in the recipe... If you need a bit more, just let me know and I'll add them in with the others :)
What you need:
- Store bought pie crust- room temperature (Hey you wanna make your own, go right ahead)
- Large cookie cutter
- Parchment paper
- Cookie Sheet
- 1 Egg (For the Egg wash- Egg whisked with a splash of milk)
- Filling of your choice (I did Apple for my first batch, which I will include that recipe later in the description.)
- Fork (to press the sides together)
- Rolling pin
- Cookie Sticks
- Cinnamon and sugar.
Pre heat your oven to 375
Take one of the sides of the pie crust out of the wrapper, sprinkle flour down on your working surface and some on the rolling pin. Lay the crust out flat and then use your rolling pin to press it out evenly. [Picture]
Once you’re satisfied with the way your flattened crust looks, take out your cookie cutter and dip the cutting part of it in some flour. [Picture] Proceed to cut your shapes out making sure that you end of with an even number (one for the top and one for the base). [Picture]
Place on an ungreased baking sheet lined with parchment paper.
My tip- cut as much out of the two parts of the pie crust as you can, then gather the scraps and combine them together, roll them out and press out more. I wouldn’t keep combining it too much just because once it gets too much flour on it; it doesn’t want to roll out nicely.
Place the cookie sticks into the center of each piece of the cut outs on the cookie sheet. (I really had no rhyme or reason of how long they were, just enough to where they would fit on the cookie sheet. I also arranged them on the cookie sheet where one was facing one way and the other was facing the opposite way so I could fit more on one cookie sheet )[Picture]
Now the filling –YUMMY
Like I said earlier I did Apple, which really all I did was take my “famous” Apple pie recipe and scaled it down. I normally don’t measure out anything out so hopefully you can stay along with me here. EeeK! –Oh and I will include my Apple Pie recipe in a different post later on after this one.-
I took three of my favorite apples, Gala, skinned them, cored them out then cut them into slices and chopped them up into little squares. [Picture] After that I added about 2-3 tablespoons of sugar and 1 tablespoon on cinnamon to them… just enough to coat them really. Then I also added in 1 tablespoon of flour. I always mix everything together in a bowl that has a lid since it’s so much more fun to do it that way. =) Plus Addison loves to shake the bowl for mommy. Once everything is all shook up (Yes when I wrote that I repeated it out load in an Elvis voice) place about a teaspoon of filling in the middle of each cut out.
--Now depending on what shape your cut out is will determine how much filling you can add. Take for example the stars that I did could only hold about a teaspoon where are the hearts on the other hand could hold much more. Just use your judgment on how much your shape can hold and if you over fill it you can just take the top off and take some out… believe me I had to do that the first time I filled one.—
Once you have the correct amount of filling in, take your egg wash (again that’s just one whole egg whisked together with a splash of milk) and spread onto the edges. This will help keep your sides together while your fork them. [Picture]
Add on the top of the cut out and make sure everything lines up evenly. Once everything is in place take your fork and press the prongs into the sides of the cut out, forming a seal. [Picture] Make sure you press the dough tight around the stick so when it bakes it forms to the stick.
Then take your egg wash again and brush the top of the cut out with a thin layer, this will give you that awesome brown glow that everyone loves. [Picture] After that I just sprinkle on some more sugar and cinnamon. (That way when you bite into it you get that orgasmic crunch from the melted sugar.) [Picture]
Bake in the oven for about 18-20 minutes depending on the size of your cut out, cool on a wire rack and enjoy!!
Oh yea a little disclaimer, I let mine sit on the cookie sheet for another 5 minutes or so, just because the first time I pulled them out Steven got all excited and grabbed a hold of one of the sticks and pretty much melted his fingers off.
