Thanksgiving Menu Ideas

I just love Thanksgiving. It's the kick off to the whole Holiday Season of eating, warm & fuzzies and get togethers. It's a time to reflect on your life and past traditions; time to reflect on childhood memories and the nostalgia of a simpler time. With this in mind, I think sometimes we try and do too much to recreate a magazine perfect dinner table. If you are planning on hosting Thanksgiving, try, try, try (and I know it's hard) to resist the temptation of making a little bit of everything and simplify your meal into a managable menu. It's always good to have any appetizer or two; such as a cheese ball, dips.....This way if something isn't quite ready by the time the gang arrives, then there's no pressure. Also, I have lots of casseroles on my website. I just love casseroles. There an attractive and simple dish and it's just plain hard to mess up a casserole. My favorite holiday casseroles are: Sweet Potato Casserole, Squash Casserole, Broccoli Casserole and Cheese Potatoes Gourmet. The Sweet Potatoes are a little different from the standard marshmellow topping. This uses a mixture of corn flake crumbs, pecans and of course brown sugar, nutmeg & butter. BUT, for all of you marshmellow traditionalists, you can always add marshmellows on the top as well - make a nice design on top - stripes or circle.... Also, this squash casserole is great too. It's mashed and mixed with sour cream and cream of chicken soup topped with a buttery stuffing mix. Kids actually will eat their squash in this casserole. Most of the time, they don't realize they're eating squash. And if you're a cheese-a-holic like me, then you'll definitely love the Broccoli Casserole and of course the Cheese Potatoes Gourmet which just oooozes with cheese. The broccoli is great too. It's a mixture of rice & cheese soup and shredded cheese topped with buttery crackers. Yummm.

Also, another menu item that is a staple on my holiday menu as well as everyday menu is my famous Maccaroni & Cheese. Handed down from my Mom, this is an absolute awesome dish. My kids won't eat the box stuff and have never like any restaurants mac & cheese, BUT I guarantee you will love this dish. It's so creamy and cheesey and it's easy to make.

So, have 2 or 3 casseroles, mac & cheese for all the kids who are picky eaters and it's also good to have 2 or 3 more plain sides; such as the standard Mashed Potatoes or Skillet Corn. I have lots of other sides and casseroles on my site. Most of my recipes are easy, traditional recipes with a Southern twist.

Of course there's always room for desert. You just have to have pumpkin pie. Although, most people don't eat it, I have a recipe that takes the traditional Pumpkin Pie and gives is it a layer of Cream Cheese and tops it off with Maple Syrup & Pecans. Pumpkin Pie with Cream Cheese.....Anything is good with cheese. Also, you just have to have some chocolate. I've got a great, easy recipe that's ALMOST homemade. Chocolate Chip Cake is basically a box recipe with a little addition! It's soo good. I have lots of traditional deserts as well, like Chess Pie and Coconut Pie.
