These Are A Few of My Favorite Things – Fall Food Edition

Yes, I am still alive.

No, I have not blogged in two days.  It feels like two months. 

Yes, I am still obsessed with all things pumpkin.  But I'm nice and I like to share my obsession with my blog readers, so I thought I would tell you about a few of my favorite fall food items right now.


After I realized that my Pumpkin Spice Latte habit was basically eating away at my kid's college funds, I decided to go the cheap route and start brewing my own coffee at home and filling up my travel mug each morning before I leave for work.

Obviously, I still want the pumpkin taste in my coffee so that I can pretend that it is fall in Texas.  (4 Real: Until the plunging temperatures showed up this morning, you would NOT have know that it is fall in Dallas.  Yesterday was October 26th and I sent both of my kids to school in shorts and short sleeve shirts.   Then I had to shoo them inside from the yard last night at 6:30 because of the mosquitos.) 

Back to my favorite fall foods... I found Pumpkin Spice coffee K-cups from Green Mountain Coffee this weekend!  This is perfect because Trey would never drink coffee from a pot that has previously brewed Pumpkin Coffee, in fear that he might expose his taste buds to that horrific flavor!  Then I add the deliciousness of Pumpkin Pie Spice creamer and sweeten it a little with pure liquid Stevia drops (thanks the giveaway that I won awhile back on Erin's blog.)  Perfection!  

Of course I can't talk about my favorite fall foods without mentioning Libby's canned pumpkin.  I made another batch of pumpkin pancakes after my race on Saturday.  I whipped up 1/2 cup of Kodiak pancake batter, 1/2 cup of water and 1/4 cup of pumpkin then added extra cinnamon, nutmeg and ground ginger to the batter.  For my pancake topping, I wanted something besides syrup or peanut butter.  After looking in my pantry, I came across a jar of Caramel Apple Butter that I got as a gift last year. 

Oh. My. Goodness.  

I grew up in West Virginia where we have Apple Butter festivals.  I have a friend from high school who was the Apple Butter Festival Queen.  My great-grandmother used to make homemade applesauce that was even better than Cracker Barrel's. 

But this stuff...  

Rocks my world! 

I could not wait to sink my fork into these amazing pancakes.  This lunch brought together all of my favorite fall foods into one delicious meal. 

So I ate it again the next day for breakfast.

You see, I kept a little secret from you over the weekend.  You may have noticed that my family was not in any of the pictures from my race.  No little children were in attendance at the Texas State Veggie Fair on Sunday either.  In fact, I spent the entire weekend in my house alone.  Well, unless you count Coco pug.  Besides the pug to keep me safe from intruders, I was alone.   (4 Real: Haha, I crack myself up.  I would be more scared that the pug would lick someone to death if they tried to come in our house.)

On Thursday morning, Trey packed up the kids, his parents and their dog so they could all go back to his hometown in Louisiana for the weekend.  There was a big family party planned, the annual Rice festival and some class reunions over the weekend.  Sadly, Trey had to endure answering the same question approximately 297 times...

"Where's your wife this weekend?"

Well, little wifey was back in Dallas WORKING HER BUTT OFF because this is the busy season at my job.  AND even if I wasn't extra busy, I do not have extra vacation time left at work.  AND I had already signed up for the 13.1 Marathon in Dallas. 

The "working my butt" thing off has spilled over into this week too, which is why I have not been blogging daily.  But I promise I missed all of you!  But I missed my family even more, so I am heading home to carve pumpkins with them soon.  Trey will probably try to escape while I am carving pumpkins with the kids so he will not have to smell or see pumpkin guts!
