If you have ever been to Cajun Country in Louisianna around holidays, you may have been lucky enough to try Turducken. It's a boneless turkey stuffed with a boneless duck, stuffed with a bonesless chicken and all stuffed with a cornbread andoullie sausage stuffing. Just saying all that is a lot of work.
I really wanted that same taste but with a lot less effort. So I came up with the Turducken Burger Recipe. It just so happens that this recipe is also gluten and dairy free.
Ingredients:
12 oz duck breast with or without skin, ground
1 pound ground turkey thigh meat
1 pound ground chicken breast meat
2 1/2 tsp Cajun seasoning- more if you want a stronger taste
8 oz fresh andoullie sausage OR Easy Homemade Fresh Chorizo
Organic Extra Virgin Olive Oil
Directions:
Just like when I made Duck Burgers, put the duck into the food processor to grind. If you have a meat grinder attachment to your KitchenAid, you can use that instead but the processor is really fast and an easier clean up for duck. To cut down on the fat, remove the skin.
Mix all of the meats and seasoning together. Test the seasoning level by cooking off a tablespoon of the mixture. If you want more seasonings add in more Cajun seasoning. You can also add in more sausage.
Form into patties and cook in a heavy skillet on medium high. Serve with cornbread and your favorite beverage. I like a nice green bean salad too.
I hope you'll give these a try for your Mardi Gras party this year. Make them into mini burgers and serve them on top of round cutouts of polenta or cornbread.
