    Any recipe with the word "enchiladas" in the title sounds good to me, so of course I was excited when I spotted these Butternut Squash Enchiladas from Vintage Mixer.     It's count-down-to-the-Superbowl week, so I'm guessing a lot of people are on the hunt for the perfect chili recipe for the big game. Doesn't chili and the Superbowl just automatically go together? I'd never had chili made from lentils, but when I tried this Vegan Lentil Chili with Roasted Red Peppers, Olives, and Green Onion, I loved the slight sweetness that the lentils added to this barely-spicy chili.     I'm a huge fan of tofu, and I'm always looking for easy tofu recipes to expand my limited knowledge about how to cook it at home. This recipe for Grilled Tofu with Miso Dressing went right to the top of my "must try" list! Not only is the recipe quick and easy, but the Miso Dressing has so many of my favorite Asian flavors like soy sauce, ginger, and sesame.     Spicy Cauliflower Soup

    Did you know there are two holidays today? Of course everyone knows it's Martin Luther King Day in the U.S., but you might not know that it's International Hot and Spicy Food Day. As soon as I heard that I thought it would be fun to find something that was unexpectedly spicy for Meatless Monday. What I wanted was a hot and spicy recipe for a dish that's not normally hot and spicy, and Spicy Cauliflower Soup from A Veggie Venture fits that description perfectly. Most cauliflower soups are rich and creamy but this one is healthful and deliciously spiced with coriander, cumin, chili powder, and turmeric in addition to the red pepper flakes. Alanna says the inspiring recipe suggests you could eat it with a dollop of plain yogurt, and I'd definitely want that on mine to cool down the heat.  Read more >

I admit that since I've discovered how much I like kale I've become a bit kale-obsessed, and I think the idea of using it on a pizza is pure brilliance.   6. Slow Cooker Vegan Sweet Potato Chili from A Year of Slow Cooking

    Sweet Potato Chili

    For a week or so I've been wondering what would be the perfect meatless recipe to start the new year. Then I realized that the first Monday of the year is also the first Monday back to work for many people who've been enjoying the holidays. That's when it hit me that the perfect meatless meal for a re-entry Monday like this one would be a slow cooker recipe you could put in the slow cooker in the morning and cook on low while you're at work!
