St. Patrick's Day is coming, and one happy side effect of the wearing-of-the-green holiday is that cabbage goes on sale in grocery stores all over the U.S. For cabbage fans like myself, that's the perfect chance to try something new with this ultra-healthful green vegetable. I think these Vegan Cabbage Rolls from FatFree Vegan Kitchen look like a delicious option for Meatless Monday, or any other day when you have cabbage in the vegetable crisper.
