For those with vegetable gardens, have you started bookmarking zucchini recipes yet? Zucchini are starting to appear in farmers' markets and CSA boxes and it's only a matter of weeks now before home gardeners have more zucchini than they know what to do with. As a public service for gardeners everywhere, I'm sharing these Vegan Southwestern Black Bean Zucchini Tacos from Coconut and Lime. This looks like a fun new way to use zucchini, and it's also perfect for a Meatless Monday dinner.
