Week of Dinner Ideas

Happy Sunday!

It's been a long weekend with one very fussy little girl. Sofia is teething & with the lack of sleep all around, it feels like we have a newborn again.

We relaxed most of the weekend, cleaned the house and made it out to dinner with our good friends. Mike and I normally stay at home on the weekends since we both work full-time, we like to maximize our time with Sofia when we can...so going out Saturday was a huge treat! We dropped Sof's off at my parents house around her bedtime and went to a Japanese Steakhouse for dinner & drinks. It was such a fun night, crazy what a night out can do for parents!


Sunday is my day to meal plan, write out our grocery list & hit the store as quickly as I can. I normally get everything together during Sofia's morning nap and then run to the grocery store during her afternoon nap.

Here's what's going down in the kitchen this week:

Sunday| We had a huge roast dinner at my parents house, complete with mashed potatoes and brussels with bacon.

Monday| Turkey, Kale & Brown Rice Soup that we didn't get around to making last week. Served with Red Lobster cheddar bay biscuits that I found at Wal-Mart, might have to frequent that store more often!

Tuesday| Velveeta Cheesy Skillets Chicken & Broccoli. Have you tried these? I'm addicted, they are so good & super quick to cook up.

Wednesday| Turkey Club Sandwiches & Chopped Italian Salad. One look at Natalie's picture and I was salivating & knew the salad had to be on the menu this week.

Thursday| Baked Chicken Fajitas. Which reminds me, I still need to post the recipe. We make this a couple times a month, I would have it everynight if I could but Mike's not a huge Mexican fan. Served with chips & queso.

Friday| Dinner Out. I'll give you one guess what it might be!? ;)

Saturday| Grilled steaks, asparagus and pasta shells with butter & parm.
